If you pull the heads to change the head gaskets, take a straight edge and check the heads for flatness.  Make sure the head is clean then run the straight edge from one side to other looking for day light on any of the flat surfaces.

If I can just buy a set of head gaskets and not have to buy new head
bolts that seems pretty good.

Are there reasons to leave the head gaskets alone?
