While I am probably not older, definately not wiser, and certainly not more experienced, I do have a comment.
 
Not too long ago, I was in the same situation.  Things seemed like they were getting to be too much - heck I couldn't even decide what carburetor to run, let alone if I was going to be able to ever fix the rust-through spots on the cowl/firewall!
 
The guy that's helping me rebuild my engine gave me a suggestion...one that I'll pass along to you.  It's really simple and it did help.
 
Get a chair (lawn chair, camp chair, recliner, whatever) and put it next to your car.  Get a cold beer (or whatever your favorite beverage is), and just sit WITH the car.  Ten minutes - two hours - whatever.  Just look at it, decide what you want to do and where you want to go with it.  Don't touch any tools, don't touch the car, just look and think.
 
I tell you what - I did this (with one beer) for about 2 hours (warm beer is ugh!).  It helped me tremendously.  I realized what my shortfalls were going to be (money and experience) and what my strengths were (lots of time).  My biggest decision was what engine - 318 Poly rebuild, 360, or a 440?  Argh - too many things to consider.  Finally decided on the Poly (thanks again, Gary!).
 
Anyhow...you first need to decide what you want the final product to be.  For me, it's not about a show-car...it's about a car that I can drive to/from the track on the weekends, and to/from work during the weekdays when the weather is nice.  For that, I don't need a complete rotisserie resto.  I don't want to half-ass anything, but I don't need to replace the entire front end, I can cut/weld new metal for the firewall, etc.
 
I don't know if this helps you or not, but at the very least if you do it you'll drink a beer or two!  :)
