The shoe, drum and backing plate are all sized as a set.  Don't mix and 
match here.  The backing plate centers the web of the shoe with the center 
of the WC piston.  The back edge of the shoe rides on the six "pads" of the 
backing plate, and the front edge of the shoe is near the inside edge of the 
drums brake surface.  The offset of the drum (hub face to back edge) is also 
a consideration.  With a drum that is too deep (for 2.75 width), it won't 
sit of the hub flange since it will hit the backing plate first.  Basically, 
its all a matched set.

The WC should be the same bore for all there.  Increase braking will come 
from more friction material contact area rather than more pressure from the 
WC.  The servo (self wedging) motion of the shoes will also dramtically 
increase braking force.

I use 10x2.5s on the A bodies rear when I do a disk upgrade with a 8.25 or 
8.75 rear.  With the additional weight of the B bodies, the 11" rear is a 
good bet.

I'm just fiinishing up a set of 11x2.5 shoes, backing plates and drums. 
Sandblasting / priming / painting the parts. The "inside" hardware is also 
getting the resto treatment..

So do I want to get different backing plates to stick with 2.5" shoes, or 
take the easy way out and go with the 2" shoes?  The 11x2 shoes are still an 
upgrade over my stock 10", and I'm sort of in a hurry to get the thing 
rolling again.  Also, are all of the 11" drums the same?  The 2" aren't 
supposed to have narrower drums, are they?  I would think it wouldn't matter 
if the drums are wider anyway - right?
