Aviation fuel, 100LL, is a good choice to run in your high performance engine.  There is ample TEL content so that an additive for lead substitute is unnecessary and is simply an added expense for you.  
It is always better to store your car with a full tank of fuel unless the storage is for a very long time.  The "shelf life of aviation 100LL is much better than that of automotive gasoline-----and for that matter the shelf life of most brands of Premium (90+ octane) is better than that of unleaded regular.  This is particularly true where there is little or no alcohol added to the gas.  The fuel deteriorates through an oxidation process that is retarded by restricting the volume of air (oxygen) in the fuel tank and by having fuel without a large quantity of oxygenate additives (such as alcohol)  in the fuel.  Storage of the fuel in a cooler climate (I live in Florida) through just the winter months is not long enough for very much deterioration and certainly there will be no risk of gum formation.
The condensation issue is also taken care of by having a small air space within your tank.  Your reference to airplane storage illustrates a critical issue for machinery stored outside under the stars becaues they will chill by many degrees on a clear night---often to a temperature below the dew point of the air, thus the risk of condensation exists not only on the outside surfaces of the machine, but within fuel tanks, cabins, etc.  Covered storage helps with that problem, and enclosed storage can nearly eliminate the condensation.
