Matt, 
Do not jack up the axle. Since passenger car springs are under the axle, the weight of the car is suspended from the axle by the U-bolts and jacking or blocking under the axle and removing the U-bolts will let the car fall on you. Instead jack up the rear of the car until the rear wheels are just off the floor and block the car with stands under each side where the front of each rear spring fastens to the car. The U-bolts can be removed and new ones installed with the axle in place since it rests on top of the springs on the bolt that holds springs together. If the reason you are changing U-bolts is to take out lowering blocks, do one side at a time by lifting the axle just high enough to take out the block and install the shorter U-bolt before loosening the other side. This will prevent the heavier front of the differential from rolling forward as it tries to do if both sides are loose and you try to jack up either side. You need to take the bottom of the shock absorber off before you loosen the U-bolts so the spring can hang loose and DON'T block the axle; just let it rest on the springs. Make sure the spring perch hole is centered over the spring bolt before tightening the U-bolts, and you may need to then jack up the axle just far enough to put the shock back on. Be sure the car is well blocked so it can't fall on you. If nothing else is available, a stack of wheels with or without tires under the rear bumper will do. Be careful, Many people have been pinned under a car because they thought a bumper jack would be good enough.
