Anecdotal evidence:  I have 7" wide cop car wheels (offset unknown) on the back of my '58 Windsor and the right-rear tire (especially) and the left-rear tire both rub under many loading and turning conditions.  I don't have a photo of the right-hand side, but if so you would see a lot of rash on the outside of the tire.  This left-hand side photo shows what appears to be a generous amount of room between outside of tire and inside of wheel well, but fully-loaded and moving, the tire will rub.

As far as opinions go, I say Crager SS chrome looks awesome and period-speed-part correct for a high school kid from circa 1978.
