Years ago when I bought my  '55 Ply, I used to have the same problem of oily film deposit on the windows, dash, etc. I never knew what it was but it must have been fumes from the decomposition of the plastics inside. Sometimes, so much would accumulate inside that it would completely fog up the windows leaving a thick oily film deposit everywhere.
I was always concerned about the carcinogenic potential of these fumes. Later, I replaced the upholstery and the fumes continued until I replaced the headliner and the problem went away. I always suspected the headliner and the insulating foam inside.
 
I never used anything but Windex and dishwashing soap to clean up the oily film. I wouldn't use organic solvents to clean the inside because of the health hazards and high flamability.

Could it be deposits from the plastics in the car?  They can give off
fumes, especially in the heat.  Might need a petroleum based solvent first.
