My '57 had also the optional hood ornament but it was so pitted and pierced that i need to use as template to make a new. The job was made in Spain and the result was very good (see http://www.ifrance.com/c-i-f/57hood-ornam.htm but forget the text, it's too late..).
The only drawback ; it's so sharp that it has made holes in my new cover.. I now put a cap on it !
About upholstery, try Gary Goers, he made my complete upholstery with the correct die-heated "crown" and "linear" lines. Expect to high price and delay but the job is fantastic.
