I think this fellow may be trying to scare you off because he doesn't want the
hassle of dealing with a very large old car.
On the other hand, it's not outrageous . . . for a really good "showcar"
finish.
You could save a lot of money by doing much of the removal of trim & small
items yourself. And possibly by buying the paint yourself. I'm sure there are
other more experienced people on the list who will help you with advice.
