IML: Hydraulic Lifters - Question

Would someone explain to me (or direct me to a source that explains) how
hydraulic lifters work? How do they know how far to pump up? Do they simply
pump up to full length and other valve train components are designed such
that valves have no lash but do not open too far so as to damage the engine
(or that the valves do not fully close)? This may seem like a silly
question, but I'm just trying to understand how they
