My answer would depend on the quality/taste of your
custom work. If you simply rebuilt a 440 for more
power using modern technology (cams, exhaust, EFI) but
kept an eye for a "correct" look, I'm OK with it.

If it gets to the point of unessecary doo-dads
(chromed-out, braided hoses, powder-coated wingnuts,
etc.) then it's just tacky.

Same thing pretty much goes for the outside too. It's
the detail that makes these cars so interesting, so
re-doing the interior with some cheap vinyl, rather
than finding OE or OE-looking material kills a lot of
the appeal.
