Hi Neil,
I have never tried a gravity fill, so no help there. The shoes can be adjusted any time after the drums are on as the shoes are against the anchor pin and are unaffected by the wheel cylinders.

Question1) brake lines are all empty. Somebody told me u could rough
fill a system by just cracking all four bleeders and start to fill the
  master cylinder, and gravity will just somewhat fill the lines, no
need for pumping till final bleed. True or not?
Question 2) And what of adjusting the rears with the starwheel
adjusters? Should I do this before or after I fill the lines?
