I seem to remember they used something like 8 chargers in the movie. Count the hubcaps coming off of them, like 12 or more through the movie!! As I recall the RT was indeed a Hemi, (which added to the front heavy landings), while the 'stang was a 390. Supposedly, the driver in the mustang had an awful time trying to keep up with the Charger, even after repeatedly trying to slow it all down, so the Mustang was massaged with cam, intake, headers, ect. They still had to slow the chase down some. That was the only car used and it was ofcourse destroyed. I think Vanishing point used 3 Challengers, with the one driven off at first being a Hemi car, the other 2 stunt cars I don't think were Hemi. (and ofcourse the camaro that hit the 'dozers.) Never did get any decent info on the Yellow Charger in Dirty Mary Crazy Larry. One destroyed obviously, but don't know if there were multiple stunt cars.
