If there's enough room, two nuts tightened together at the top of the stud, and back it out of the carb using the bottom nut. That way, if its the wing-nut thats stripped, it can be cut off and you can still use the stud.
Else, if planning to replace the stud, or you know the stud is stripped, vice grips work just fine.
