This is from the Mancici Racing site.  I used the Milodon unit.  I
checked it in hot water along with a standard unit.  The high-flow
Milodon unit has a much greater area open when it is open.

Additionally the Milodon and probably the others on the page also have a vent passage to assist in filling the system, standard stats do not have
a vent.  I drill three additional small holes in the flange around the
stat, I want to make sure that I have flow while the engine is heating
up and I don't want to have problems filling the system.
