You won't destroy the manifold by enlarging the bores. The old carb set-up will still work. It'll just have more clearance. You won't be changing any temperature issues either. If it worked before it should still be OK. I'd give it a try. Do be very carefull to keep the shavings out of the engine though. I'd probably pull the manifold to do it. Then you can really clean it and detail it too so it looks real nice.
