Be careful with the sandblasting.  It can warp thinner body panels due to heat buildup.  Also be sure to get ALL the sand out of EVERYTHING prior to painting.  You will be unhappy if you don't.  That is the limit of my actual experience.
 
The rest of this is second hand info --
 
Dipping will get everything, but you must be sure to get all the solution out of all the nooks and crannies.  Anything that had rust or paint on it will be bare metal.  So if you can't paint it with a paint gun - backside of an enclosed panel - you need to figure out a way to coat it with something to prevent rust.  I've heard that anything that is not steel will be dissolved.  To remove the VIN Plate you'll have to drill out the rivets.  There is a vendor somewhere that sells factory look alike rivets when replacing it.
