Hi Jesse and welcome to the group. I've owned a 65 Dart GT convertible since Mar of 84 and it's undergoing a very slow (time challenged) resto. With the right components, your 318 will produce more than adequate power. The first thing I'd buy is a Factory Service Manual (available as a repop on eBay) - $46.00 or thereabouts. You'll find it'll be invaluable. Unfortunately vendors who can help us early A Body people either have very little to offer or have really bad reputations about shipping stuff/taking your money and shipping much, much , much later (Laysons comes to mind).
Besides my Dart convertible, I also have a 65 Dart wagon (both are getting 340 upgrades), a slant 6 65 Valiant Signet convert, a 65 Barracuda (upgrading from the 273 2 barrel to a 273/235 Commando) and just picked up a slant 6 66 Barracuda.
