Jim...being its an original AFB carb w/well-type choke, make sure the choke unloader (pull-off) diaphagm thingy (technical term!) is working correctly.

My carb is a 1965 Carter AFB 3858S.  Do you have spec info on that?

Again, I'm no expert.  But I'd have thought anything choke related
would clear up after the choke opens all the way.  The first time I
ran it, it cleared up after 10 minutes; I think long after the choke
would have opened full.  The second time after starting cold, it ran
rough for 5 minutes before I shut it down.

I'll try again tonight since it's a little warmer and I'll pay closer
attention to the choke.

Maybe it's too rich to start with?  Is there anything other than the
choke that could cause it to 'miss', and then get better as it gets
warmer?

Sounds like it's rich when the choke is on (cold). Depending on
which AFB you have there is a cold setting spec
