Hi Dennis,
Actually if you have an electric choke the blocked off intake gasket would be better as it will keep the intake and carburetor cooler for better performance.

I have a Holley with an electric choke.  I just didn't know if there was
any advantage to blocking the crossover.

If it does not make any difference I'll use the pan I have with the open
crossover.
