Sandy , 190 may be fine . Too many variables to say xxx is just right. One thought , put on a low pressure cap, like 5 psi ; it would vent at well over 212 still, but avoid really high pressure in the cooling system caused by 15psi or more caps. . If it vents , something not right but chances are it will not ever vent . If it does not , you are in good shape , no matter what gauge says. The problem in this : , the real one, is high pressure cap and real overheating can blow out core plugs on block or head .., or hoses . The core plugs Chrysler uses are extremely dependent on skill of installer . They blow out easily if not set exactly right . Better to add a few quarts of water if low pressure cap opens than deal with core plug blow out on a highway due to high pressure cap . If a real Problem. That being said the gauges are not very accurate . If it stays under a real 212 you have no pressure , all is ok . It may go up after shutoff, ignore that .
