Years ago I had the same problem with my 300G. Even with an auto part store "rebuilt" starter I had the problem. I removed the starter and brought it to a specialty rebuilder and discussed the problem with him. He took the starter apart and determined that it had the smallest field coil offered for that starter. In checking with the '61 parts book, I see one field coil for a 318, and another for the larger engines. I seem to remember he told me that there was yet a third coil even larger that was offered, and he put that in my starter. I have never had a problem since with "heat soak" which is what you are experiencing. Seek out and talk to a starter rebuilder for help. Starting motor has less than that as I put in a rebuilt about 400 miles in. Terminals all clean & tight. Aside from pulling the starter out and having it gone through, anyone have any other ideas? A friend suggested a cole-hersee relay might help, but I have my doubts.
