Carbs are sized for airflow so the engine would be starved at high RPM. Given that there are equalizer chambers or tubes between the carbs, the fuel-air mix could physically get to the right cylinders. As ram manifolds are carefully tuned for proper operation, operating a dual quad carb manifold car on one carb could not be expected to perform as smoothly at idle or anywhere else. My '55 carbs are hard linked together. Later Hemi's had progressive linkage so they did operate on a single carb until the second carb was called for by accelerator pedal position and/or air flow. I think both carbs in a progressive system provided fuel-air mix at and near idle, however. My '55 has chokes on both carbs (and they are manual-installed by a previous owner). You would be short one carburetor accelerator pump, also-making starting and accelerating substandard.
