Hi Gary,  You should keep a thermostat in your engine.  The water pump 
needs A  restriction   to push against to make it work right.  They call 
it packing.  It  gets all the air out of the hot spots.  Without the 
thermostat  They will work better at high speed , But when you idle the 
pump will cavatate in the water and not pump it through the system.   
Drilling the small hole in the thermostat is a good thing.  I do all of 
mine.   Get a thermostat from Chrysler for a Motor Home or many speed 
shops carry them. I believe Robert- Shaw makes them.   They have larger 
openings and pass more water.
    I worked in Metallurgy for many years and one thing they found on 
engine wear is a engine running at 150 Degrees or less has 3 times more 
wear on the cyl. walls and rings than running at 180 degrees.
