Larry, you really need to get hold of a copy of Wayne Graefen's treatise
on restoration details for the 300C. I find the book indispensable in
figuring out what to do with certain details on my C, and most answers
for your '58 will be the same. For example, those bolts you refer to
were painted right with the rest of the engine in an assembled state and
would therefore necessarily be in silver.
