Just to add to John's recommendation on the dash paint. I just recently refinished the black dash in my '65 300 and used a flattening agent with an acrylic eurethane single stage. I mixed the paint very carefully in small quantities and tested the mixes until I found the perfect gloss. You don't need much flattening agent at all!!

I ended up mixing up about 16 oz. of paint(reducer, hardener, paint)and added less than an ounce of the agent. (I was actually adding it from a tablespoon and as I recall it was about two tablespoons)

The eurethane is very easy to spray and color sands very well if you choose to polish it. I'm very happy with the results.
