Dave, I have both the 1960 manual and the 1961 supplement. I am currently restoring a 1961 Chrysler, but find that I always refer to the 1960 manual because it is much more complete. Until you asked the question, I never really thought about what of any importance was in the 1961 supp. You got my curiousity up, so I paged through it. The two new things that I saw are (1) the alternator charging system and (2) the three speed tranny with the shifter on the floor, both of which were introduced in 1961. Also, the 1961 supp has info on some accessories such as auto pilot (new version introduced in 1961?). The body section has an exploded view of the front clip showing the various bumper brackets which are different from 1960. This supp is barely 1/2 inch thick and has a lot of filler material on specs, lubrication, etc, which almost undoubtedly didn't change from 1960.
