Garrett, the carb and fuel pump have been replaced I believe, I know the
carb was.
I'm guessing it might have, as Neil said, a clogging off fuel pickup. That
same thing happened to my other 57 I had years ago. Took the tank off and there
was chunks of a rubber water hose that had disintegrated over time. Someone has
apparently tried to suck gas out of the tank, and the hose fell in!! After it
would suck the remnants up in, then it'd die, only to refire as the suction went
away, only to refire and pull up in again later.

Possibly a contaminated fuel tank, where the debris is sucked
into the gas tank pick up screen, where the engine starves for
fuel.
The stuff eventually falls off of the screen and the car
starts/runs, until the screen gets clogged again.
