You're missing the obvious.  Every eBay user can change his/her preferences to display the e-mail address of the seller whose auction he/she has won.

 

Sign on to eBay using your user ID and password

Go to the [My eBay] tab

Click on the [Preferences] tab

Click on [My eBay Preferences]

Page down until you see [Sign In Activities]

Then change "See email addresses when viewing User IDs"

Click on the [Modify My Sign In Activities]

didn't say if or how you paid him. If you used PayPal, you can go back in your 
account and recall all the transactions in that time frame. That'll have his 
e-mail address. You may also get more info (I think) through his profile in 
PayPal.\
