Josh, In 1955, Chryslers came as Windsor Deluxe, New Yorker Deluxe or C-300. The "Deluxe" lines began in 1951 when the Royal became the Windsor and the former Windsor became the Windsor Deluxe. In 1953 the Saratoga became the New Yorker while the old New Yorker became the New Yorker Deluxe. So the 1953 line was Windsor, Windsor Deluxe, New Yorker, and New Yorker Deluxe (plus Custom Imperial and Crown Imperial). For 1954 the Windsor was dropped, leaving Windsor Deluxe, New Yorker, and New Yorker Deluxe. Finally for 1955, the New Yorker was dropped leaving just Windsor Deluxe and New Yorker Deluxe. For 1956 Chrysler dropped the "Deluxe" from both series. As for production, Chrysler built 1,395 Windsor Deluxe and 946 New Yorker Deluxe convertibles. Concerning colours, I do not have anything on American Chryslers, but Canadian-built Chryslers could be had in - Sandstone Beige, Regina Turquoise*, Palm Green, Valley Green, Gulf Green, Glade Green, Georgian Green, Yukon Blue, Saguenay Blue*. Patrician Blue, Laurentian Blue, Victoria Blue, Teal Grey, Miami Ivory, Mohawk Red, Coral*, Galleon Gold*, Amazon Green*, Sunburst Yellow, Parisian Blue, Emberglow, Fantasy Pink, and of course, black. (* - metallic colours). Green was very much "in" for 1955, it seems. Chrysler of Canada offered 132 two-tone colour combinations. (Chrysler Canada also listed 5 three-tones, but those were available only on the Dodge Custom Royal - and they all had Sandstone Beige as the upper colour!)
