To answer your Question, yes why not get the correct part?.
It probably would be the best way to go Vs trying to fabricate a new one.
I assumed that the stainless inserts were made out of flat 1/16 or
thinner pieces of stock glued into place .
I also assumed (wrongly again) that these inserts were only available for
two years.
Do you know of any available ?

Question: Why not get correct parts and use a wire wheel to refinish? It
is stainless, after all.
