Here are some of my thoughts:
Do the AC cars also have bigger radiators or are the only differences the
water pump and pulley?
Don't forget that the heat transfer effeciency of the system is key. Make
sure that it is clean.
The thermostat is there mostly to keep the temperature up and in a
specified range. Engine wear is much higher at low operating
temperatures and you can tune the engine to operate in the specified
temperature range.
Look into water "wetters". These allow the coolant to contact (wet) the
surfaces of the cooling system better allowing better heat transfer and fewer
"hot spots".
