Granted, distilled water won't have the impurities you speak of but don't forget that anti-freeze does contain corrosion inhibitors too so it's not like you are pouring straight mineral water into your engine. Fighting corrosion is as much or more the job of anti-freeze than simply keeping the coolant from freezing.
