Granted, distilled water won't have the impurities you speak of but don't 
forget that anti-freeze does contain corrosion inhibitors too so it's not 
like you are pouring straight mineral water into your engine.  Fighting 
corrosion is as much or more the job of anti-freeze than simply keeping the 
coolant from freezing.  Again, using distilled water does sound like it can 
only help and not hurt, I just wanted to note the anti-corrosion properties 
of anti-freeze.

The shop manual for my 2004 Dodge Cummins Diesel recommends distilled water
with the anti-freeze mix.  After thinking about it, it makes perfect sense.
The impurities in regular tap water are what causes the rust to form in the
cooling system.
