Unless you have made major modifications to your cooling system or engine, put the stock 195 degree thermostat in there and maintain the system as it should be.
Only racers and others who tear down engines frequently should be running the 180 degree thermostat.
120 degrees is out of the question. You'll never have heat in the car.
