What is the correct width of the whitewall on a '61 Plymouth tire? I was thinking 2 1/4?

Typically car manufacturers use at least two brands of tires on new cars. In case there is a strike at one company, they can keep the production line going from the other tire co. They can be different from one assembly plant to another also! And those whitewalls aren't necessarily the same width between tire companies. And also, the molds can get changed, updated during the year. So this is a very hard question to answer.
There are factory photos in books and for sale on ebay, etc. Look at many and decide what you would like it to be. I think you are right it is going to end up around 2.25 - 2.5" wide.

Thank you, StillOutThere.

I've got a '61 Plymouth and would like to buy a set of tires with the correct width whitewall. Agreed, width may vary from plant to plant and thru the year.

Can anyone recommend a brand/place to buy the tires from? I've heard of Diamondback, Coker, etc. I was thinking of a radial with the correct width whitewall.

My personal recommendation is DiamondBack. I am NOT a fan of Coker. DB Tire will give you exactly the custom width you request and have multiple grades of WW radial. Go to their web site or order their catalog or both.

Many with with Coker tires seem to have problems, frankly, not sure what their issue with making proper tires might be.

Well, looked at both websites, DiamondBack is $199 per tire, Coker is 'starting at $200'. Since I'm retired and on a budget, I'll just get some narrow whitewalls from a neighborhood tire store, should be less than $100 per tire.

the width of the wide white of the '61 plymouth is 2" If I had the extra cash I would buy a set of those tires for my '61 but I might put porta walls on instead
