We fired up the 62 Dodge today and I am not familiar with these carbs or how to set them up. I have a hard enough time with one carb. Now we have two? Yikes!
I don't know what the big brass screw in the middle there even does.
Any help would be greatly appreciated..

The brass screw is an air bleed, it controls the amount of air entering the carb at idle. Turning the screw counterclockwise allows more air in and will increase the idle speed. This is used in conjunction with with the fuel mixture screws to adjust the idle/low speed air/fuel mixture.
You only need one as you adjust them one at a time. Make sure your linkage is properly adjusted first according to the document provided above.
I made an adapter to fit the AFB using a 1 lb. cottage cheese container. Fits the top of the carburetor perfectly and I just cut a hole in the bottom to match the Uni-Syn. These also make good carb covers for when you're doing stuff under the hood with the air cleaner's off.

Well, I can see that I don't have an "anti-stall unit" as shown in the documentation. I wonder if it that's only necessary when you have A/C. We don't.
Also, as for the uni sink tool. would two vacuum gages suffice? If not I'll buy the tool. My concern is that we have a .509 Purple Shaft in it. The old model .509. Mancini's tells me the old .509 and new .509 are all together different. That the new ones are way more street friendly.
Ordinarily with that level of cam would provide very little if any vacuum at idle. That's why they needed those tanks that stored some vacuum or the power brakes wouldn't work. We don't have power brakes but I'm wondering if we'll see any vacuum signal at an idle?
I kind of understand the central brass screw adjustment.

Even regular cars have vacuum reservoirs for the power brakes. Not a ram thing. The anti-stall is used on cars with or without A/C. The Uni-Syn should still work since it's using the air drawn in through the air horn and not a vacuum source.
