I'm sure that Mickie's little hand at 6:30 means something (actually if you're counting, it's more like 5:30) as does the dash 5 ("-5")

I just don't.
My understanding is the "-5" indicates the fifth minor version of a part number, with all versions of that part number being interchangeable. In other words, you could locate a -3 version of this block or a -6, and they would both work in all cases where a -5 was used.
The clock in the casting actually does indicate the time that the foundry poured the block! The 'D' in the upper right hand corner indicates day shift, while an 'N' would indicate night. Some blocks have both, with an arrow pointing to the correct letter. This was done as a quality control measure. If the machining area starts seeing a run of bad parts, they can reject the entire batch.
Somewhere on the block is the casting date. All of my Hemi engines have had the date cast at the top of the block, hidden under the area where the cylinder heads meet the intake manifold. I'm not sure where it will be on this Wedge block, but I'm certain there is one.

The core plugs are made of hard wood and the abrasive nature of the sand causes the core plugs to wear out, so they are replaced individually as needed.
Many still believe that a low (or no) dash number is desirable because there is less chance of core shift in the casting....never proven.

Raw casting THEN went to
various machining shops to be worked into usable parts for assembly.. They THEN
went into inventory, and were pulled as need for assembly. Only when all the assemblies
were needed for a final engine build did the engine get BUILT. MONTHS could pass
between casting times and actual engine builds.
