As far as the 440/727 combo, it's not exactly a bolt in but as far as swaps go it's pretty simple and straight foward to include the starter. As far as the project itself, it sounds like even if you can do the majority of work yourself (drivetrain and body) you've got a pretty extensive and expensive project ahead of you. I guess the big question you should ask yourself is if you have the resourses, space and time to do it. Be honest when you answer the question.
