Neal,  Just as the others have mentioned, putting blankets and cardboard over and on everything is a must do.  The one way of dropping the K frame, mount the engine/trans to it and drop the body over top is the safest method for the paint. However...I went this route...
I put my rear wheels in the air with stands or on my ramps (tires about a foot off ground).  I use an engine leveler on the hoist and make the trans side lower then front.   I CAREFULLY raise, move and lower the trans/engine over the radiator support (which is sitting lower because of the rear of the car being up.)  navigate the tranny into the tunnel far enough so the engine clears the support.  As I lower the engine a little, I'll also raise the front of the car a little.  This helps the tranny get down into the tunnel without to much fuss.  The reason for raising the back of the car is to cut down the angle the engine and tranny have to be to get it "shoe horned" in.
Just my 1/2 cent worth...
