I have a non-undercoated 64 Ply and the bottom is gray.This could be a 
situation similar to the painted rad. support where there are 
differences between factories.

However,this topic always comes up at least once a year and the 
consensus from the old timers,gurus,judges and people that worked on the 
lines,is that the bottom is a gray-primer type color.There is body color 
overspray on the underside due to the rockers getting painted.

I have a floorpan section of a 65 Ply that I parted sitting in my garage 
if anybody wants pics.It had 56K miles and no undercoating.
