Joe-
I've broken a bunch of easy outs trying to get frozen bolts and studs out.
That's why I drill them out now.  It's sometimes tough if it's a tough angle
or hard to hold the drill but I find this to be the easiest way for me.
You have to retap almost always but it's just to chase the threads.
Turn twice, back out once to clean, turn in two more, back out one, and so
on.
Use a good oil like chesterton.

Thanks for the tip on the sears extractors.  My machinest has some super
short ones with large hex heads that he swears by.  I'll stop by and see
what
brand they are.  He once was telling me that, due to them being short, they
dont
torque up and break like the longer ones do.  Joe
