Saw a 34 Ply 2dr Sedan at the car show in Campbellford today. 360 with 727 trans. it was very very nice as well. 
Re the 66 Baracuda  my own opinion is i would always built the 360 given the choice . We have done a few with 9 to 1 ppistons , Comp cams extreme energy hydraulic cam , Perfomer intake with 750 Edelbrock carb. headers and a bit of head work and dist work .(pocket porting mosltly. )
Makes for a very nice working good running streetable combo. Surpising power!
If hood clearance was good i would use the Perfomer RPM instead.
