Just depends on the offset of the wheel.  You can put some pretty big meats on the back with a neg off set wheel.

  This brings up a good question - what's the biggest I can fit on an 8" wheel in the back and a 7" on the front of my 64 Polara 500?  Anyone know?

  oops! Forgot that part. I went with 21560R/15 front and 27560R/15 on the rear. Now I had new rear springs made and mine sits up in the back a bit.Gives it that 60's rake. Have over an inch clearance left in the rear,so no rubbing at all.
