Tim,
You will get inundated with opinions/facts on this question.
I prefer 20-50 Valvoline Racing Oil in my 340 car all year round; our
winters in Santee (San Diego County, CA) can range from 18-80deg. in the
winter and 60-105deg. in the summer.  I would guess that with your
temperature range you would probably use 10-30 Kendall or any other quality
motor oil.  I use the "racing" oil because my vehicles sees 6500rpm any and
every day I take it out; approx. 1500miles p/yr.
Haven't timed/tuned it in 12yrs. and this mild 340 still runs 12's easily.
