To the best of my knowledge the paint for the dash and other painted bits inside are the same paints that would be used on the outside.  Painted the same way and treated the same.  Just find the color code in this PDF and have it made.  It's got exterior and interior. 

 

So yes you would sand, fix dents, primer and paint and polish them after they are dry.  They will look like new again.
