Eric,
I think it would be a mistake NOT to rebuild the heads at 81K miles. Like Dodger recomended you should install hardened exhaust valve seats, and get a modern 3-angle valve job ( extra horsepower ).

I was going to have the heads redone but I'm not 100% sure this is required.  Maybe just a good cleaning and check for damage is all that's needed.  If I have to replace any of the valves I will replace them all, but with what?  What's the best valve for a stock motor.  Should I change out the cam for a little bit more performance?  Or change it to get better MPG?  I will drive the car a few times a week, so it won't just sit in a garage collecting dust.  I was also wondering what other things I should do the the motor, things to improve it's performance or MPG.  The last '62 Newport I had got 25mpg on the freeway.  They only have a 2bbl carb.  I'm just not sure what I should do to the motor other than replacing seals and pumps so insure it don't break down.  At any rate I will have the whole motor cleaned inside and out, repainted and sealed...
 
I know I will get many opinions on what to do with it, I will then be better informed and can pick and choose what to do with it.
