Mopar Performance paint is available from a lot of places, including dealers. If you want the max wedge look it is Orange paint, P4120751. 

The general rule is that the cleaner the metal, the better the paint will stick. http://www.ehow.com/how_4432119_paint-engine.html gives an example of cleaning. That should be easy for you since the motor came from the machine shop.

Using aluminum foil to cover some places you do not want to paint is an option. The foil is easy to manipulate to match the underlying area and protect it from the spray.
