Tom it definatley sounds like you have a choke problem. It's been awhile since I worked on a stock 2 bbl from that era but does that carb have a vacuum pull off on it? It's a vacuum pod that's attached to the carb that should pull the choke open about 1/4" as soon as it starts. If it does make sure it's working and adjusted right. You can adjust it by bending the hairpin linkage attached to it. If you have the kind of choke I think you have you can adjust it by taking the choke off the manifold and adjusting the spring tention from underneath. Set it so it's loose and just "barely" closes when cold. If your stock manifold has never been off the heat crossover is probably plugged with carbon and you're not getting enough heat to the choke pocket to open the choke fast enough. Frankly this was a common problem and these chokes never did work right anyway.(Boy are we spoiled with all these new fuel injected cars or what?) If all else fails and your only driving the car in the summer just wire the choke open. I've done this on a lot of old Mopars, but you may have to pump it a few times to get it started and let it warm up a little before taking off. Dan GO SABRES!
