  I know what you're saying, John.  I scratch my head on the insurance 
valuation myself.

You really have to pull out any emotional attachment you may have for 
your particular car, and try to assess how much you'd have to pay in the 
market to replace it with a similar car in equal condition to yours.  An 
unfortunate fire, windstorm, flood, or accident could make the amount 
you're insured for pretty important.

I try to make my best guess based on what I'm seeing in auction reports, 
and base my request for insured value on that.  A very important point 
is to make sure your policy is for a stated "Agreed Value".  The 
insurance company will want some photos and documentation - and maybe 
even their own visit to your car - to establish its true condition.  But 
then you have a contract with them to receive that amount in full for 
your totaled vehicle without a value dispute.

I think the few extra bucks a year to insure it for all the Agreed Value 
the insurance company sees in your car is worth it in peace of mind.  
I've never tried this, but if you give Hagerty's (or whatever insurance 
company) a phone call, will they help you figure it out?
